One of my favorite sweet treats are brownies. And I don’t mean fluffy chocolate cake taking the form of a little square, I mean dense, chewy, fudgey brownies. I have tried countless low-carb, diabetic, and sugar-free brownie mixes and have been sorely disappointed… until now. They still are not quite the consistency of a real brownie made with sugar, however the Gourmet Chocolate Brownie Mix from Diabetic Kitchen produces the closest approximation that I’ve found by a pretty wide margin.
The mix boasts that these brownies are gluten-free, high in fiber, low-carb, contain no artificial sweeteners, no sugar alcohols, and are sugar free. So how do they sweeten them you ask? These brownies use monk fruit extract and stevia extract powder. I’m quickly becoming a big fan of stevia, as it seems to be the sweetener that allows products to be as close in experience to their sugar-based counterparts as possible.
The Diabetic Kitchen Shopify Store proudly proclaims:
We won’t ever use any kind of artificial sweeteners. That means NO Aspartame, NO Sucralose and NO Chemicals. We sweeten our products ONLY with natural ingredients that won’t spike your blood sugar and we NEVER use sugar alcohols.
As it’s a baked good, there has to be some form of flour analog in there, and these brownies use coconut flour. All this ads up to a total of 17g of carbs per brownie (1/16 of the pan), with 15g of that being fiber, for a net result of 2g of carbs per brownie.
Finally, the Diabetic Kitchen also produces mixes for a handful of other baked goods as well, including Nut Butter Cookies, Pancakes & Waffles, and a variety of muffins such as Cheesy Bread, Banana, Chocolate, Pumpkin Spice, and Blueberry.
